The ingredient of Dad S Day Steak And Mushies

  • 200g sliced streaky bacon cut into 1cm pieces
  • 1 2 cup finely chopped shallots
  • 1 2 cup 125ml red wine vinegar
  • 1 tablespoon caster sugar
  • 1 2 cup 125ml olive oil divided
  • 600g swiss brown mushrooms wiped clean quartered
  • 600g beef rump steak about 2cm thick
  • 80g about 6 not packed cups baby rocket

  • to make the vinaigrette heat a large heavy saucepan over medium high heat add the bacon and cook stirring occasionally for about 5 minutes or until crisp using a slotted spoon transfer the bacon to a large bowl reduce heat to medium and add the shallots to the bacon drippings sautu00e9 for about 5 minutes or until the shallots are tender add the vinegar and sugar and cook for about 8 minutes or until the liquid is reduced to about 3 tablespoons remove the pan from the heat and stir in 3 tablespoons of the oil season the vinaigrette with salt and pepper and keep warm
  • meanwhile to cook the mushrooms heat a large heavy cast iron skillet or frying pan over high heat add 2 tablespoons of oil and the mushrooms and cook stirring occasionally for about 10 minutes or until the mushrooms are deeply caramelised season with salt and pepper transfer the mushrooms to the bowl with the bacon cover and set aside
  • to cook the steaks place a wire rack on a rimmed baking tray sprinkle the steak generously with salt and freshly coarsely ground black pepper pressing the seasonings into the meat return the cast iron skillet to high heat add the remaining 1 tablespoon oil to the skillet then add the steak and cook for about 1 1 2 minutes per side or until the meat feels only slightly resilient when touched with a fingertip for medium rare transfer the steak to the wire rack and let rest for 3 minutes
  • to serve mound the rocket on a platter slice the steaks on a bias and place them on top of the rocket toss the warm mushrooms and bacon with the warm vinaigrette to coat spoon the warm mushroom bacon vinaigrette over the steaks and serve
